Carrot Soup

Ratio: for every 5 carrots - 1 onion, 3 small potatoes, 6 cups of broth

- Peel and slice onions, carrots and potatoes

- Saute onions for 5 mins

- Add onion, potato, carrots, garlic, salt, pepper, vegetable stock, bay leaf, thyme to a large pot.

- Optional: add ginger, milk

- Simmer for 25-30mins, until carrots can be pierced with knife with no resistance.

- Allow to cool before blending (preferably not in food processor)

- Optional: add curry powder

- Add olive oil; blend to desired consistency

Add lemon before serving?
